Salmon With Quick Parsley Walnut Pesto

  • 1 cup finely chopped fresh parsley
  • ½ cup walnuts, chopped
  • 1 tablespoon minced garlic
  • black pepper, to taste
  • ¼ cup lemon juice, + 3 tablespoons
  • ½ cup olive oil
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon salt
  • 2 tablespoons olive oil
  • 1 skinless salmon fillet
  • 2 tablespoons olive oil
  • ¼ cup lemon juice

Instructions

  • Make the parsley walnut pesto: In a small bowl, stir together the parsley, walnuts, garlic, pepper, lemon juice, and olive oil until fully incorporated.
  • Make the salmon: In a small bowl, mix together the black pepper, cayenne, and salt. Rub the seasoning over the salmon fillet.
  • Heat the olive oil in a large skillet over medium heat. Place the salmon in the pan, skin-side down. Cook for 5 minutes, then flip and cook for another 5 minutes
  • Pour the lemon juice over salmon. Cook for 3 more minutes, until the lemon juice has reduced.
  • Transfer the salmon to a plate and spoon the parsley walnut pesto on top. Serve immediately.
