Vegetarian Black Bean And Sweet Potato Tacos

  • ¼ cup sweet potato, diced
  • 1 teaspoon olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 corn tortillas
  • ¼ cup black beans, 1 can, drained and rinsed
  • ¼ cup pico de gallo, see recipe
  • ¼ avocado, diced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  • Toss the sweet potatoes with the olive oil, salt, and pepper in a medium microwave-safe bowl, and microwave until tender, about 2 minutes.
  • Heat the tortillas in a dry skillet over low heat and fill with cooked sweet potatoes, black the beans, pico de gallo, and avocado. Garnish with cilantro.
  • Enjoy!
