- •1 small red bell pepper, cut into matchsticks
- •1 large firm mango, peeled and cut into matchsticks
- •0.5 medium red onion, thinly sliced
- •0.5 cup chopped cilantro leaves
- •0.25 cup honey
- •2 medium limes, juiced
- •1 teaspoon salt
- •0.125 teaspoon cayenne pepper, or more to taste
Instructions
- Make the salad: Toss jicama, bell pepper, mango, and onion together in a large bowl.
- Make the dressing: Stir cilantro, honey, lime juice, salt, and cayenne pepper together in a small bowl.
- Pour dressing over salad and toss to coat. Cover and refrigerate for at least 15 minutes before serving.
