  • 1 large jicama, peeled and cut into matchsticks
  • 1 small red bell pepper, cut into matchsticks
  • 1 large firm mango, peeled and cut into matchsticks
  • 0.5 medium red onion, thinly sliced
  • 0.5 cup chopped cilantro leaves
  • 0.25 cup honey
  • 2 medium limes, juiced
  • 1 teaspoon salt
  • 0.125 teaspoon cayenne pepper, or more to taste

Instructions

  • Make the salad: Toss jicama, bell pepper, mango, and onion together in a large bowl.
  • Make the dressing: Stir cilantro, honey, lime juice, salt, and cayenne pepper together in a small bowl.
  • Pour dressing over salad and toss to coat. Cover and refrigerate for at least 15 minutes before serving.
