Instructions
- Heat oil in a large skillet over medium heat. Place potatoes in skillet, cover, and simmer. Turn occasionally until potatoes are almost tender and a little browned, about 10 minutes.
- Stir in sausage, onions, and peppers. Cover and cook for about 5 minutes or until onions and peppers are desired tenderness.
