- •½ cup soy sauce
- •¼ cup honey
- •2 cloves garlic, minced
- •1 teaspoon minced fresh ginger
- •1 tablespoon sesame seeds
- •1 tablespoon canola oil
- •1 lb chicken, cubed
- •1 teaspoon kosher salt
- •1 teaspoon freshly ground black pepper
- •1 cup broccoli, chopped
- •1 cup red bell pepper, seeded and diced
- •cooked rice, for serving (optional)
Instructions
- Make the stir-fry sauce: In a small bowl, mix together the soy sauce, honey, garlic, ginger, and sesame seeds.
- Make the stir fry: Heat the canola oil oil in a large nonstick pan over medium-high heat. Season with the salt and pepper, then stir until the chicken is browned, about 5 minutes.
- Pour the sauce into pan and stir to coat the chicken, then bring the sauce to a boil. Once the sauce is bubbling, add the broccoli and red bell pepper to the pan and toss to coat in the sauce. Cook until the chicken is cooked through and the vegetables are tender, 5-8 minutes more.
- Serve over rice, if desired.
