Gluten-Free Smoked Loaded Nachos

  • 1 ½ lb ground beef
  • 2 tablespoons taco seasoning
  • 1 bag gluten-free tortilla chips
  • 2 cups shredded cheddar cheese
  • 4 roma tomatoes, chopped
  • 1 red onion, chopped
  • 2 large avocados, sliced
  • ½ cup green onion, chopped
  • 1 cup sour cream, optional

Instructions

  • Set smoker to 300°F. Place beef in a cast iron skillet and brown in a smoker. Once browned, add taco seasoning. Then, remove beef from the skillet and set aside and set the smoker to 225°F.
  • Line skillet with a layer of chips, cheese, meat, tomatoes and onion. Then, repeat these steps until the skillet is full. Top skillet with remaining cheese.
  • Smoke at 225° for 10 minutes. Then, set the smoker to 400° and cook until the cheese is golden brown.
  • Take the skillet off of the smoker and top with avocado, green onion, and tomato.
  • Serve topped with dollops of sour cream.
