- •1 tablespoon coconut oil
- •1 teaspoon butter
- •0.25 cup flaked coconut
- •1 lime, zested and juiced
- •1 cup coconut milk
- •1 cup chicken broth
- •salt, to taste
- •ground black pepper, to taste
Instructions
- Rinse rice until the water runs clear; drain.
- Heat coconut oil and butter in a large skillet over medium-high heat. Add rice and coconut flakes; cook and stir for 3 to 4 minutes. Stir in lime juice, then add coconut milk, chicken broth, lime zest, and salt. Bring to a low boil.
- Reduce the heat to low, cover, and cook for 20 minutes. Remove from the heat and keep covered for 5 minutes. Fluff with a fork and season with pepper before serving.
