Coconut Lime Rice

Ingredients

  • 1 cup basmati rice
  • 1 tablespoon coconut oil
  • 1 teaspoon butter
  • 0.25 cup flaked coconut
  • 1 lime, zested and juiced
  • 1 cup coconut milk
  • 1 cup chicken broth
  • salt, to taste
  • ground black pepper, to taste

Instructions

  • Rinse rice until the water runs clear; drain.
  • Heat coconut oil and butter in a large skillet over medium-high heat. Add rice and coconut flakes; cook and stir for 3 to 4 minutes. Stir in lime juice, then add coconut milk, chicken broth, lime zest, and salt. Bring to a low boil.
  • Reduce the heat to low, cover, and cook for 20 minutes. Remove from the heat and keep covered for 5 minutes. Fluff with a fork and season with pepper before serving.
