Springtime Strawberry Chocolate Chip Muffins

Ingredients

- •2 cups all purpose flour
- •1 teaspoon salt
- •2 mL double acting baking powder
- •1 tablespoon cinnamon
- •1 teaspoon nutmeg
- •2 eggs
- •½ cup vegetable oil
- •½ cup unsweetened vanilla almond milk, or regular milk
- •¾ cup plain greek yogurt
- •¾ cup white sugar, or 1/2 cup brown sugar
- •3 teaspoons vanilla extract
- •2 teaspoons almond extract
- •1 ½ cups strawberry, chopped
- •1 cup chocolate chips
Instructions
- Sift and combine flour, salt, baking powder, sugar, cinnamon, nutmeg together in a bowl.
- Beat eggs, oil, vanilla, almond extract, Greek yogurt, almond milk together in another bowl.
- Add the dry ingredients little by little to the creamed mixture, and mix well. Stir in chocolate chips and strawberries.
- Grease a 12-cup standard muffin tin and fill with batter.
- Bake for about 20-25 minutes at 350°F, or until the tester inserted in the center comes out clean. Cool pan on rack before removing.
- Serve.
