Asparagus Casserole with Hard-Boiled Eggs

  • 2 teaspoons butter
  • 4 tablespoons all-purpose flour
  • 1.5 cups milk
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup dry bread crumbs, browned in butter
  • 20 asparagus tips
  • 5 hard-boiled eggs, chopped

Instructions

  • To make the white sauce: Melt butter in a small skillet over medium-low heat; stir in flour, then milk. Cook until thickened and season with salt and pepper.
  • To make the casserole: Spread 1/2 of browned bread crumbs in the bottom of a 9x13-inch baking dish. Add layers of asparagus and chopped egg, alternately. Pour white sauce over all and top with remaining bread crumbs.
  • Bake in the preheated oven for 30 minutes.
