- •½ cup cake flour, plus 2 tablespoons
- •¾ cup cornstarch, divided
- •1 teaspoon baking soda
- •½ teaspoon smoked paprika
- •½ teaspoon garlic powder
- •½ teaspoon onion powder
- •1 teaspoon kosher salt, divided, plus more to taste
- •¾ cup sparkling water, cold
- •3 cups cauliflower florets
- •½ cup buffalo hot sauce
- •1 stick unsalted butter
- •2 tablespoons honey
- •sauce of choice, for dipping
Instructions
- Preheat the air fryer to 425°F (220°C) for 5 minutes.
- In a medium bowl, whisk together the cake flour, ½ cup plus 2 tablespoons cornstarch, the baking powder, smoked paprika, garlic powder, onion powder, and ½ teaspoon salt. Slowly whisk in the sparkling water until just combined. Do not overmix; some lumps are okay.
- In a large bowl, toss the cauliflower florets with the remaining ¼ cup cornstarch and ½ teaspoon salt.
- Shake off any excess cornstarch, then dip the cauliflower in the wet batter, letting any excess drip off.
- Working in batches, add the cauliflower to the air fryer in a single layer and cook for 5 minutes, or until golden brown. Remove from the air fryer and repeat with the remaining florets.
- Meanwhile, make the sauce: Add the hot sauce, butter, and honey to a small skillet. Cook over medium heat, stirring occasionally, until the butter is melted and the sauce is evenly combined.
- In a large bowl, toss the fried cauliflower with the buffalo sauce until well coated.
- Serve immediately with your favorite dipping sauce.
