Ingredients

  • 2 cups shredded zucchini
  • 0.25 cup finely chopped onion
  • 2 eggs
  • 1 clove garlic, minced
  • 1.5 cups buttermilk baking mix
  • salt and ground black pepper to taste
  • oil for frying

Instructions

  • Mix zucchini, onion, eggs, and garlic together in a large bowl. Blend in baking mix, salt, and pepper.
  • Heat 1/2 inch of oil in deep-fryer to 375 degrees F (190 degrees C).
  • Drop batter by spoonfuls into hot oil; fry until evenly browned and fluffy. Drain on paper towels. Sprinkle with salt before serving.
