- •2 cups fresh peach slices, or more to taste

- •1 tablespoon lemon juice
- •1 teaspoon vanilla extract
- •0.25 teaspoon ground cinnamon
- •0.25 teaspoon ground nutmeg
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Spray an 8-inch square baking pan with cooking spray.
- Make the crumble: Whisk flour, sugar, baking powder, and salt together in a bowl. Cut in cold butter using two forks or a pastry cutter until the mixture resembles coarse crumbs. Slowly mix in egg yolk and cold water; the dough should be really crumbly. Press 1/2 of the crumble mixture into the prepared pan to make the crust. Reserve the rest to top the filling.
- Make the filling: Stir peach slices, sugar, flour, lemon juice, vanilla, cinnamon, and nutmeg together in a bowl until well combined. Spread filling evenly over crust, then sprinkle remaining crumble mixture over filling.
- Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Remove from the oven and let cool to room temperature, then cut into 12 bars and serve.
