  • 2 15-ounce cans of black beans, drained and rinsed
  • 2 15-ounce cans of chickpeas, drained and rinsed
  • ½ red onion, chopped
  • 20 cherry tomatoes, halved
  • ½ cup roughly chopped fresh parsley
  • ½ cup chopped fresh mint leaves
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • ¼ cup lemon juice
  • salt, to taste
  • pepper, to taste
  • ¼ cup crumbled feta cheese

Instructions

  • In a large bowl, combine the chickpeas, black beans, red onion, cherry tomatoes, parsley, and mint.
  • In a small bowl, mix together the olive oil, vinegar, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss to coat.
  • Divide the salad between serving bowls and top each with 1 tablespoon of crumbled feta cheese.
  • Enjoy!
