- •2 15-ounce cans of black beans, drained and rinsed
- •2 15-ounce cans of chickpeas, drained and rinsed
- •½ red onion, chopped
- •20 cherry tomatoes, halved
- •½ cup roughly chopped fresh parsley
- •½ cup chopped fresh mint leaves
- •¼ cup olive oil
- •¼ cup apple cider vinegar
- •¼ cup lemon juice
- •salt, to taste
- •pepper, to taste
- •¼ cup crumbled feta cheese
Instructions
- In a large bowl, combine the chickpeas, black beans, red onion, cherry tomatoes, parsley, and mint.
- In a small bowl, mix together the olive oil, vinegar, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Divide the salad between serving bowls and top each with 1 tablespoon of crumbled feta cheese.
