Ingredients

  • 7 large potatoes, peeled and cubed
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup sour cream
  • ¼ cup butter
  • 2 tablespoons chopped green onions
  • 2 teaspoons salt
  • ¼ teaspoon black pepper
  • 1 cup shredded Cheddar cheese

Instructions

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.
  • Combine mashed potatoes, spinach, sour cream, butter, green onions, salt, and pepper in a large bowl. Spoon into the prepared dish.
  • Bake in the preheated oven for 15 minutes. Top with cheese and continue baking until cheese is melted, about 5 more minutes.
