- •7 large potatoes, peeled and cubed
- •1 (10 ounce) package frozen chopped spinach, thawed and drained
- •1 cup sour cream
- •¼ cup butter
- •2 tablespoons chopped green onions
- •2 teaspoons salt
- •¼ teaspoon black pepper
- •1 cup shredded Cheddar cheese
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish.
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.
- Combine mashed potatoes, spinach, sour cream, butter, green onions, salt, and pepper in a large bowl. Spoon into the prepared dish.
- Bake in the preheated oven for 15 minutes. Top with cheese and continue baking until cheese is melted, about 5 more minutes.
