- •1 medium onion, chopped
- •1 green bell pepper, chopped
- •1 large carrot, peeled and thinly sliced
- •3 cloves garlic, minced
- •2 (15 ounce) cans black beans
- •1 (14 ounce) can chicken broth
- •2 cups cubed cooked ham
- •0.5 teaspoon salt
- •0.25 teaspoon cumin
- •ground black pepper to taste
- •1 cup shredded Cheddar cheese
- •1 cup sour cream
Instructions
- Heat oil in a large pot over medium heat. Stir in onion, bell pepper, carrot, and garlic; cook until tender, about 5 minutes. Mix in 1/2 of the black beans, then add chicken broth.
- In a blender, purée remaining beans until smooth; stir into the pot and bring soup to a boil. Reduce the heat to low. Mix in ham, salt, cumin, and pepper; simmer for 20 minutes. Garnish with Cheddar cheese and sour cream to serve.
