- •2 flax eggs, 1 flax egg = 1 tbsp chia seeds/flaxmeal + 3 tbsp water mixed, let sit for 5-15 minutes
Instructions
- Whisk together flour, sugar, baking powder, nutmeg, and cinnamon. Once mixed, add in vanilla extract, apple juice/cider, and chia/flax seeds. Whisk until smooth.
- Fold in diced apple.
- Pour batter into a greased loaf pain.
- Bake on center rack at 350°F for 50 minutes or until cooked through.
- Let cool briefly, then slice and serve.
