  • 1 apple, diced
  • 1 ½ cups flour
  • ½ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon nutmeg
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 1 tablespoon vanilla extract
  • 1 cup apple juice
  • ½ cup applesauce
  • 2 flax eggs, 1 flax egg = 1 tbsp chia seeds/flaxmeal + 3 tbsp water mixed, let sit for 5-15 minutes

Instructions

  • Whisk together flour, sugar, baking powder, nutmeg, and cinnamon. Once mixed, add in vanilla extract, apple juice/cider, and chia/flax seeds. Whisk until smooth.
  • Fold in diced apple.
  • Pour batter into a greased loaf pain.
  • Bake on center rack at 350°F for 50 minutes or until cooked through.
  • Let cool briefly, then slice and serve.
