- •1 (15.25 ounce) can yellow and white corn, drained
- •2 (11 ounce) cans white corn with chipotle peppers
- •1 large seedless cucumber, peeled and diced
- •1 cup diced red bell peppers
- •1 cup chopped fresh cilantro leaves
- •0.25 cup diced red onion, or more to taste
- •1.5 limes, juiced
Instructions
- Mix diced tomatoes with chile peppers, all corn, cucumber, bell peppers, cilantro, red onion, and lime juice together in a large bowl.
