Ingredients

  • 2 pounds very small red potatoes, scrubbed
  • 3 tablespoons unsalted butter, softened
  • 3 tablespoons finely chopped fresh chives
  • salt and ground black pepper to taste

Instructions

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce the heat to medium-low and simmer until tender, 10 to 15 minutes. Drain and let sit until cool enough to handle, 1 to 2 minutes.
  • Cut potatoes in half and place into a serving bowl. Add butter, chives, salt, and pepper; toss until butter melts and potatoes are well coated.
