- •1 large zucchini
- •1 teaspoon kosher salt, plus more to taste
- •1 teaspoon freshly ground black pepper, plus more to taste
- •¾ cup all purpose flour
- •2 large eggs
- •1 cup panko breadcrumbs
- •½ cup grated parmesan cheese
- •nonstick cooking spray, for greasing
- •ketchup, for serving
Instructions
- On a cutting board, trim the ends off of the zucchini. Cut the zucchini into quarters lengthwise and crosswise for ½-inch-thick fries. Season with salt and pepper.
- Add the flour, 1 teaspoon salt, and 1 teaspoon pepper to a shallow bowl and stir to combine. Beat the eggs in a second shallow bowl. In a third shallow bowl, mix together the panko and Parmesan.
- Coat the zucchini fries in the flour, shaking off any excess. Then, dip in the eggs, letting any excess drip off. Coat in the panko mixture, making sure all sides are covered. Transfer the zucchini fries to a clean cutting board.
- Preheat the air fryer to 400°F (200°C). Spray the air fryer basket with nonstick spray.
- Working in batches, arrange the zucchini fries in the air fryer basket in a single layer, making sure they aren’t touching. Cook until golden brown and crispy, about 10 minutes. Repeat with remaining zucchini fries. Season the fries with salt.
- Serve with ketchup.
