- •1 small jicama, peeled and julienned

- •2 tablespoons olive oil
- •1.5 tablespoons lemon juice
- •1 tablespoon pomegranate juice
- •1.5 teaspoons water
- •1 clove garlic, minced
- •1 teaspoon chopped fresh dill
- •1 teaspoon chopped fresh basil
- •1 teaspoon salt
- •1 teaspoon ground black pepper
Instructions
- Place lettuce, radishes, tomatoes, green onion, jicama, cucumber, and bell pepper in a large salad bowl.
- Whisk olive oil, lemon juice, pomegranate juice, water, garlic, dill, basil, salt, and black pepper in a small bowl. Drizzle dressing over the salad just before serving.
